Lemon Meringue Pie. 
Ingredients:
- Baked 9 inch pie shell
- 1½ cups sugar
- 6 tablespoons cornstarch
- ¼ teaspoon salt
- ½ cup fresh lemon juice
- 3 egg yolks (well beaten)
- 2 tablespoons butter
- 1 teaspoon grated lemon peel
Sift sugar, cornstarch and salt into a 2-3 quart saucepan.   
Gradually blend in lemon juice and ½ cup cold water.   When 
it is smooth blend in the egg yolks and butter.   Add 1½
cups boiling water while stirring constantly.   Bring the 
mixture to a full boil, stirring gently all the while.   
As it thickens, reduce the heat and simmer for 1 minute.   
Remove from heat and stir in the lemon peel.   Pour the 
yellow squelchy mass into the pie shell already prepared.   
Top with meringue 
and bake according to directions.
